Delightful chocolate chunk banana muffins

If you love chocolate-covered bananas, then you will probably love these chocolate chunk banana muffins. They make a delightful snack during the day and are great to serve for breakfast. 

Normally, I can't eat bananas as fast as they ripen. So, I use the overripe bananas in various recipes, and they work great for this muffin recipe. But if you don't have any that are overripe that is fine too. The following ingredients are what you will need to make these yummy chocolate chunk banana muffins.

Ingredients:

  • 3-4 overripe bananas (depending on their size)

  • 1/2 cup Splenda Brown Sugar Blend 

  • ¼ cup Splenda

  • 1 egg or 1 tablespoon of dried egg powder + 3 tablespoons of water mixed to equal one egg

  • ⅓ cup softened butter

  • 1 teaspoon pure vanilla

  • 1 ½ cups self-rising flour

  • ½ teaspoon cinnamon

  • 1 ½ cup chocolate chunks, or chocolate chips

  • ¼  cup mini white chocolate chips 

  • Optional: ¼ cup chopped nuts

Instructions:

First, preheat the oven to 375°F. Then place baking cups in a muffin tin. You can also use parchment paper (cut to size) or butter spray to grease the muffin tin. Set the muffin tin aside.


In a mixing bowl, add the bananas, Splenda brown sugar blend, and ¼ cup of Splenda and combine with a mixer, on medium speed until well combined. Next, beat or whisk in the egg, softened butter, and pure vanilla, until they are combined well. 


Now, add the self-rising flour, and cinnamon to a separate bowl and blend to combine.


Next, combine the flour mixture with the wet mixture. Blend until both mixtures are incorporated well with each other. Now, stir in the chocolate chunks, white chocolate chips, and the chopped nuts. Then fill the baking cups with ¼ cup of the batter. A standard size muffin tin should only be filled ⅔ to ¾  of the way full with the batter.


Place the muffin tin into the preheated oven, and bake for about 20 minutes, or until a toothpick inserted in the center of the muffins pulls out clean.


When the chocolate chunk banana muffins are baked, place them on a wire cooling rack to cool. After the muffins are completely cooled, serve and enjoy.
