Black Bean Quesadillas Ingredients: 1 can of black beans 1 cup of shredded cheese 4 tortillas Optional toppings: Salsa Sour cream Avocado Green onions Instructions: Rinse and drain the black beans.  Mash the black beans in a bowl.  Spread the mashed beans on one half of a tortilla. Sprinkle cheese on top of the beans. Fold the tortilla in half. Cook on a skillet over medium heat until the cheese is melted and the tortilla is crispy.
