Ingredients: 4 boneless, skinless chicken breasts 4 cups chicken broth 1 onion, finely diced 2 cloves of garlic, minced 1 teaspoon seasoning salt 1 teaspoon freshly ground black pepper 1 teaspoon dried thyme Instructions: Place the chicken breasts in a large stew pot. Add the chicken broth, diced onion, garlic, seasoning salt, freshly ground black pepper, and thyme to the stew pot. Bring the mixture to a boil over medium-high heat. I admit deep frying food is one thing that I normally don't do, but every year, around this time, I get a hankering for a piece of fried chicken. Perhaps it's because of the changing weather. Who knows? To make this recipe a little healthier, you may use skinless chicken. You can also bake the chicken after coating it and skip frying it altogether. The latter option is the healthiest choice.  You'll need a cup of buttermilk for my recipe. To make homemade buttermilk, simply mix one cup of milk with one tablespoon of lemon juice together; stir well. Allow the milk to sit for five to ten minutes. The lemon juice will curdle the milk and then you'll have homemade buttermilk. Air-fried chicken without breading Wouldn't it be so nice to make fried chicken without all the added mess? Let me show you how that's absolutely possible. Today, I am preparing air-fried chicken legs. For this recipe, I use a mixture of spices to make an all-purpose seasoning mix. (The recipe for the all-purpose spice mix is included down below.) I don't use flour, eggs, milk, or any type of cooking oil. The drumsticks are amazingly delicious! The chicken skin is crispy on the outside with its seasoned crust, and it stays moist and juicy on the inside. Note: If you don't have an air fry oven, you can bake the chicken in a conventional oven or a convection oven and still get the same results. Today I will be making a stovetop casserole using the dip as one of the ingredients, along with chunks of chicken and small pasta shells. Leftover chicken works really well with this recipe, and you can use both white and dark chicken meat.
