  • 1 to 2 pounds of chicken, cooked, taken off the bone, and chopped into bite-sized pieces

  • Seasoning salt, to taste

  • Freshly ground black pepper, to taste

  • Poultry seasoning, to taste

  • Parsley, to taste

  • 1 can of cream of chicken soup

  • 1 to 2 carrots, chopped

  • 1 to 2 stalks of celery, chopped

  • 1 onion, diced

Ingredients for the dumplings:

  • 1 1/2 cups of flour

  • 3 tablespoons of shortening

  • 3/4 cup milk, and extra flour for rolling the dough out.

Preparing the Chicken: Cooking, Deboning, and Chopping

If you're using raw chicken, you'll want to cook it first by boiling it in a pan of hot water. The amount of water you'll need will depend on how much chicken you're adding, but you'll want to add enough water to cover the chicken to make the broth.


Cook until the chicken is done, about 25 to 50 minutes. The cooking time will vary depending on how big the pieces of meat are and if you're using bone-in chicken.


Once your chicken is cooked, debone and chop it into bite-sized, manageable pieces. Then add the prepared meat back to the stock pot.

Seasoning the Chicken: Adding seasoning salt, freshly ground black pepper, poultry seasoning, and parsley

Now that our chicken is ready to join the flavor party, it's time to add the seasoning. Sprinkle a pinch of seasoning salt, freshly ground black pepper, a hint of poultry seasoning, and a sprinkle of parsley in the stock pot. This will infuse the meat and broth with a wonderful blend of flavors that will make your taste buds do a happy dance.


In a skillet, over medium-high heat, add 1 to 2 chopped carrots, 1 to 2 stalks of chopped celery, and 1 diced onion and sauté. Place a lid over your pan and allow the veggies to cook for about 8 to 10 minutes.


Now, add the cooked vegetables to the stock pot of chicken and broth. Bring to a boil. Lower the heat to simmer for 15 to 20 minutes while you prepare the dough for the dumplings.

Preparing the dumplings: choosing the right dough and shaping techniques

For a classic chicken and dumplings recipe, just mix together 1 1/2 cups of self-rising flour and 3 tablespoons of shortening until the mixture is crumbly, then slowly add 3/4 cup of milk to the mixture to form a soft dough. Never overwork the dough, or else you'll end up with tough and less desirable dumplings.

 

When it comes to shaping the dumplings, you have a few options. Some people prefer to make drop dumplings by spooning portions of dough directly into the simmering broth. Others like to roll out the dough and cut it into small squares or circles before adding them to the pot. Whichever method you choose, make sure the dumplings are roughly the same size so they cook evenly.

Cooking the dumplings:

Simmer the dumplings in the broth mixture. Gently drop them into the hot broth and let them cook for around 10 to 15 minutes, or until they are cooked through. Avoid stirring too often and too vigorously, as this can break apart the dumplings.


For the first several minutes, cook the dumplings with a lid over the pan. Then, within the last 5 or so minutes, take the lid off and finish cooking.

Adding the Cream of Chicken Soup: Enhancing the dish's richness and flavor

Cream of chicken soup is a secret weapon for adding richness and flavor to your chicken and dumplings. It's like a magic ingredient that takes this comforting dish to the next level of deliciousness.

  • 2 pounds of ground beef

  • 1/2 cup of breadcrumbs

  • 1/4 cup of ketchup plus extra for slathering on top of the meatloaf.

  • 1 onion, diced

  • 1 egg

  • 1 teaspoon of seasoning salt

  • 1/2 teaspoon of freshly ground black pepper

Instructions:

In a large bowl, mix together the ground beef, breadcrumbs, ketchup, diced onion, egg, seasoning salt, and freshly ground black pepper. Use your hands to make sure everything is well combined.


Form the meat mixture into a loaf shape and carefully transfer it to a baking dish. To simplify the cleaning process, consider lining the pan with aluminum foil before placing the meatloaf in the dish.


Transfer the dish to a 375-degree oven and bake the meatloaf for about 30 minutes. Then add a generous amount of ketchup to the top of the meatloaf and cover the pan with aluminum foil. Place the meatloaf back into the oven and finish baking it for another 30 minutes.


Once the meatloaf is done, let it cool for a few minutes before slicing and serving with a side of delicious mashed potatoes.

Hearty One-Pot Meals

1. Beef Stew with Root Vegetables

A steaming bowl of rich beef stew, loaded with hearty root vegetables, is like a big warm hug on a chilly evening. This soul-soothing dish is a complete meal in itself and perfect for feeding a hungry crowd.

Ingredients: 

  • 2 pounds of beef stew meat

  • 2-4 beef bouillon cubes (Depending on how much beef flavor and stock that you like. I used 4 beef bouillon cubes to give my stew stock the extra beefy flavor.)

  • 2-15-ounce cans of sliced potatoes

  • 1-15-ounce can of sliced carrots

  • 1 tablespoon of dried onion flakes

  • 1 teaspoon of minced garlic, or garlic powder

  • 2 teaspoons of freshly ground black pepper

  • 1/2 teaspoon of seasoning salt

  • 1 teaspoon of chili powder

  • 1/2 teaspoon of smoked paprika

  • 2 tablespoons of self-rising flour (to thicken the beef stock)

  • Water, the amount you need will depend on how much bouillon you're using and how thick you like your beef stock to be

  • 1 tablespoon of canola oil

Instructions:

Using a Dutch oven, add your canola oil, beef stew meat, 1 tablespoon of dried onion flakes, 1 teaspoon of minced garlic, or garlic powder, 2 teaspoons of freshly ground black pepper, 1/2 teaspoon of seasoning salt, 1 teaspoon of chili powder, and 1/2 teaspoon of smoked paprika; stir and cook the meat until it's done.



Now, add the beef bouillon; stir well. Add the canned carrots with the juice and the canned potatoes with their juice. Stir well, then add the flour and combine well. 



Next, add the amount of water that you prefer. The stew will thicken (I wait to add the water in at this point and add a little at a time while the stew simmers as I think it's needed). Since I use the liquids from the canned vegetables, I use very little water. I prefer to make my beef stew stock thick (to the consistency of gravy).


Make sure that you cover your Dutch oven with its lid. Simmer for at least thirty-five minutes on low heat, simmer longer to make the meat and root vegetables more tender.


If your stock is too runny, add extra flour and stir well (too thick. Just add extra water). 

2. Sausage and Bean Casserole

This hearty casserole brings together savory sausages, creamy beans, and a medley of herbs for a satisfying one-pot meal that's as easy to make as it is delicious to eat. It's comfort food at its best.

Ingredients:

  • Sausages

  • Cannellini beans

  • Onion

  • Garlic

  • Tomato sauce

  • Herbs

  • Stock

  • Bread crumbs

  • Parmesan cheese

Instructions:

Brown sausages in a pan, then add onion and garlic.


Stir in beans, tomato sauce, herbs, and stock.


Transfer to a casserole dish, top with breadcrumbs and Parmesan.


Bake until bubbly and golden brown.


Scoop into bowls and enjoy the cozy flavors of this rustic dish.

Instructions:

Season the beef roast with seasoning salt and freshly ground black pepper.


Place the roast in the slow cooker and add the chopped onion, carrots, and potatoes.


Mix the beef broth with minced garlic and pour over the meat and vegetables.


Cover and cook on low for 8 hours or on high for 4-5 hours until the meat is tender.


Serve hot and enjoy a comforting meal with minimal effort!

2. Creamy Slow Cooker Mac and Cheese

Instructions:

Cook the macaroni according to package instructions and drain.


In the slow cooker, combine the cooked macaroni, cheddar cheese, milk, evaporated milk, melted butter, kosher salt, and freshly ground black pepper.

  • 1 tablespoon of lemon juice

  • 2 pie crusts (store-bought or homemade)

Instructions:

In a large bowl, combine the sliced apples, sweeteners, cinnamon, nutmeg, kosher salt, and lemon juice.


Roll out one pie crust and place it in a 9-inch pie dish.


Pour the apple mixture into the crust.


Roll out the second pie crust and place it over the filling. Trim and crimp the edges.


Cut slits in the top crust for ventilation.


Bake in a 375-degree oven for 45 to 50 minutes, or until the crust is golden brown and the filling is bubbly.


Let cool slightly before serving with a scoop of vanilla ice cream. Get ready for a slice of apple pie heaven!

  • 1/4 teaspoon of kosher salt

  • 1 cup of milk

  • 1 teaspoon of pure vanilla extract

  • Vanilla ice cream, for serving

Instructions:

In a 9x13 inch baking dish, combine the sliced peaches and 1 cup of granulated Splenda, or sugar.


In a separate bowl, mix the melted butter, flour, 1 cup of granulated Splenda or sugar, baking powder, kosher salt, milk, and pure vanilla extract until smooth.


Drop spoonfuls of the batter over the peaches.


Bake in a 375-degree oven for 45 to 50 minutes, or until the top is golden brown and the peaches are bubbling.
