Delicious Honey Pancakes

Ingredients:

  • 1 cup of self-rising flour

  • 2 tablespoons of granulated Splenda or sugar

  • 1 cup of buttermilk

  • 1/4 cup of milk

  • 1 egg

  • 2 tablespoons of melted butter

  • 1 tablespoon of honey

  • Butter or oil for greasing the cast iron skillet

Instructions:

In a large bowl, mix together the self-rising flour and granulated Splenda or sugar.


In a separate bowl, whisk together the buttermilk, milk, egg, melted butter, and honey.


Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.


Heat a cast iron skillet over medium heat and grease with butter or oil.


Pour 1/4 cup of batter onto the skillet for each pancake.


Cook until bubbles form on the surface of the pancake, then flip and cook for another 1 to 2 minutes until golden brown.


Repeat with the remaining batter.


Serve the pancakes warm with your favorite toppings, like honey and maple syrup.
