Creamy country-style custard

The possibilities are endless! This custard can be used to make a variety of desserts or consumed alone. It's thick, creamy, velvety, and delightfully delicious. If you're looking for a cool treat to help you beat the summer heat, you can also freeze the custard.

Ingredients:

  • 2 cups of milk

  • 1/4 teaspoon of pure vanilla extract

  • 4 to 6 eggs, depending on their size

  • 2 teaspoons of cornstarch

  • 2 heaping tablespoons of Splenda or sugar; add more if you prefer a sweeter custard.

Instructions:

In a heavy-bottomed saucepan, add 2 cups of milk and 1/4 teaspoon of pure vanilla extract. Allow the mixture to reach the boiling point.



In a bowl, add 4 to 6 eggs, 2 teaspoons of cornstarch, and 2 heaping tablespoons of Splenda or sugar together (add more sweetener if you prefer a sweeter custard). Whisk the ingredients together well.


When the milk is about to boil, pour it quickly onto the egg mixture while whisking constantly. You will need to really put your wrists into motion here and whisk the mixture vigorously to prevent the eggs from turning into sweet scrambled egg gravy.


Pour the custard back into the saucepan and turn the burner on low heat. Protect the custard from boiling by continuously stirring it with a wooden spoon until it thickens.



Once your custard coats the back of your spoon and isn't runny, take the pan off the burner and allow it to cool. Then transfer your custard to an airtight container and place it in the refrigerator.


You can use the custard to make recipes such as Ambrosia salad, custard pie, custard fruit cups, etc.
