Sugar-free condensed milk
Have you ever been in the middle of preparing a recipe that calls for sweetened condensed milk, only to find that you're out of it? If so, here's your remedy for the next time something like that occurs! I make the condensed milk in a food blender with powdered milk and a few other simple ingredients. This recipe is also sugar-free, but you can use regular granulated sugar, powdered sugar, or even a Splenda brown sugar blend as a replacement, if you desire.
This condensed milk can be used in various recipes just like store-bought canned brands, and in my opinion, it tastes great.
Ingredients:
1 cup of boiling water
2 cups of powdered milk
2 cups of white granulated Splenda
3 tablespoons of melted butter
1/4 teaspoon of pure vanilla extract
Instructions:
Melt three tablespoons of butter in a microwave-safe dish. Set the melted butter aside for a minute.
Bring a cup of water to a boil either in a microwave-safe dish (if using the microwave) or in a kettle over your rangetop. Then pour it, along with the melted butter, into your blender. (The butter and water need to be extremely hot to melt the rest of the ingredients together.)
Now, add two cups of powdered milk, along with two cups of Splenda or regular granulated sugar (if you prefer the non-diet version), and pure vanilla extract.
Place the lid on top of your blender and hold the lid down firmly with your hand. Pulse your blender for about one minute. Then blend for about twenty seconds longer. If you're using regular granulated sugar, blend the milk mixture longer. There should be no granules in the mixture. If, by chance, there are granules even after you've blended the condensed milk longer, pour the mixture into a saucepan and heat it up.
Pour your homemade sweetened condensed milk into a jar with a lid and place it inside your refrigerator to chill until you are ready to use it. It will keep for up to one week inside the refrigerator or for about four months if stored in an airtight container in the freezer.
Note:
If using granulated sugar, another way to make the sweetened condensed milk would be to add the water, butter, and sugar to a saucepan and heat it while stirring frequently. Once the granulated sugar is melted, transfer the simple syrup to your blender. Then add the powdered milk and pure vanilla extract. Pulse your blender several times to incorporate the ingredients together. Then blend for about thirty seconds.
If you prefer to leave the butter out of your condensed milk, you can. I prefer to add it to mine to create a richer flavor.
