Roasted honey-buttered parsnips

Roasted honey-buttered parsnips Parsnips look like white carrots, but they're much sweeter and have a black licorice flavor with a hint of spiciness to them. In my opinion, they taste very similar to fennel and anise. You can boil your parsnips first before roasting them, but I don't. Instead, I prefer roasting them for 45 minutes, up to an hour if needed. Ingredients: 1 pound of parsnips (about 4 to 6, depending on their size) 1-1/2 tablespoons of honey 3 tablespoons of melted butter 1 teaspoon of freshly ground black pepper 1/2 teaspoon of seasoning salt Instructions: First, under cold running water, wash and scrub your parsnips. Using a paring knife, cut off the ends of each parsnip. The skin on larger parsnips is generally tougher than that on smaller parsnips, so you may want to peel and core the bigger ones. The smaller ones will be fine to cook and eat without having to peel and core them. Once you've cleaned, peeled, and cored your parsnips, slice or dice them. I us...

Stovetop Sweet Potato Fries

Stovetop Sweet Potato Fries Want to make some delicious sweet potato fries right at home? My easy recipe will show you how to get crispy, caramelized sweet potato fries without needing a deep fryer or oven.  Sweet potatoes are great because they can caramelize on the stovetop without any added sugars because they are already naturally sweet! When you cook sweet potatoes, they release their own sugars, which then undergo a chemical reaction known as the Maillard reaction. This reaction not only gives the sweet potatoes a nice golden brown color but also amps up their flavor. To get that caramelization, all you need to do is cook the sweet potatoes in a cast-iron skillet with a bit of butter to help things along. Ingredients: 2 large sweet potatoes 2 tablespoons of butter 1 teaspoon of seasoning salt 1 teaspoon of freshly ground black pepper 1 teaspoon of smoked paprika 1/2 teaspoon of onion powder 1/2 teaspoon of garlic powder Instructions: Wash the sweet potatoes and peel them. Cu...

Double dipped fried chicken

Double dipped fried chicken So, every now and again, you might want to splurge and have some southern fried buttermilk chicken, as I did today. I admit deep frying food is one thing that I normally don't do, but every year, around this time, I get a hankering for a piece of fried chicken. Perhaps it's because of the changing weather. Who knows? To make this recipe a little healthier, you may use skinless chicken. You can also bake the chicken after coating it and skip frying it altogether. The latter option is the healthiest choice.  You'll need a cup of buttermilk for my recipe. To make homemade buttermilk, simply mix one cup of milk with one tablespoon of lemon juice together; stir well. Allow the milk to sit for five to ten minutes. The lemon juice will curdle the milk and then you'll have homemade buttermilk. Ingredients: 1 whole chicken, cut up, or about 10-12 pieces of chicken your preferred pieces (I used chicken breast) 2 cups of all-purpose flour 1 cup of butte...
