Jasmine Rice Salad

Ingredients:
1 cup of jasmine rice
2 cups of water
2 cups of mixed vegetables (carrots, peas, and corn)
Fresh parsley, to taste
Add seasoning salt and freshly ground black pepper to taste.

Instructions:
In a medium saucepan, combine 1 cup of jasmine rice with 2 cups of water.
Bring the water to a boil, then reduce the heat to low. Cover and simmer for about 15 to 20 minutes, or until done.
Fluff the rice with a fork and set it aside.
Drizzle olive oil in a skillet over medium heat.
Add a sprinkle of seasoning salt and freshly ground pepper to taste.
Heat up a skillet with a splash of olive oil over medium heat. Toss in your chopped vegetables and sauté them until they are tender yet still slightly crisp. Season with seasoning salt and freshly ground black pepper.
