Three Cheap and Easy Bean Recipes

If you're looking to save money on groceries, but don't want to compromise on taste, here are three bean recipes that are easy and budget-friendly.


Black Bean Quesadillas

Ingredients:

  • 1 can of black beans

  • 1 cup of shredded cheese

  • 4 tortillas

Optional toppings:

  • Salsa

  • Sour cream

  • Avocado

  • Green onions

Instructions:

Rinse and drain the black beans. 


Mash the black beans in a bowl. 


Spread the mashed beans on one half of a tortilla.


Sprinkle cheese on top of the beans.


Fold the tortilla in half.


Cook on a skillet over medium heat until the cheese is melted and the tortilla is crispy.


Cut into wedges and serve with your favorite toppings.


Chickpea Salad

Ingredients:

  • 1 can of chickpeas

  • 1 cucumber, diced

  • 1 tomato, diced

  • 1/4 cup of red onion, diced

  • Peppers, sliced

  • 2 tablespoons of olive oil

  • 1 tablespoon of lemon juice

  • Seasoning salt and freshly ground black pepper, to taste

Instructions:

Rinse and drain the chickpeas. 


In a bowl, mix together chickpeas, cucumber, tomato, red onion, and sliced peppers.


In a separate bowl, whisk together olive oil, lemon juice, seasoning salt, and freshly ground black pepper.


Pour dressing over the salad and toss to combine.


Chill in the fridge for at least 30 minutes before serving.


Bean and Rice Burritos

Ingredients:

  • 1 can of refried beans

  • 1 cup of cooked rice

  • 4 tortillas

Optional toppings:

  • Cheese

  • Lettuce

  • Salsa

Instructions:

Heat up the refried beans in a saucepan.


Warm up the tortillas in the microwave or on a skillet.


Spread a spoonful of beans on a tortilla.


Add a scoop of rice on top of the beans.


Roll up the tortilla, tucking in the sides as you go.


Optional top with cheese, lettuce, and salsa.


Enjoy your bean and rice burrito!
