  • ½ cup sugar

  • 1 small box strawberry gelatin (or any flavor of your choice)

  • 3 cups cooked rice

  • 1 medium box (12 oz) small curd cottage cheese

  • 1 large box (13½ oz) non-dairy whipped topping

  • ½ to 1 cup pecans (optional)

Instructions:

Heat pineapple and stir in flavored gelatin and sugar until dissolved. Add cooked rice and mix thoroughly. Cool in the refrigerator. Fold in cottage cheese, whipped topping and pecans. Chill in the refrigerator. Serve by putting mounds on lettuce leaves for a salad or by putting in sherbet glasses for a dessert.
