Beef and bean quesadillas
Here's another simple and awesome weeknight meal that you can prepare in mere minutes. I stuffed my quesadillas with cooked ground beef, refried beans, and cheese. Then I finished crisping the tortillas on the griddle, and they turned out so delicious. Of course, you can add sour cream, green onions, black olives, avocados, etc. if you want. Plus, you can stuff your quesadillas with cooked, ground, or shredded pork, chicken, shrimp, or vegetables and rice. The possibilities are endless.
Ingredients:
3 tablespoons of canola oil
1 onion, finely chopped
1 pound of lean ground beef
1 teaspoon of seasoning salt
1 (15-ounce) can of refried beans or 2 cups of homemade refried beans
4 to 6 large 10-inch self-shell flour tortillas, depending on how thick you want your filling to be in each quesadilla
1 cup of your preferred shredded cheese (I used cheddar)
Instructions:
In a large skillet, add three tablespoons of canola oil over medium-high heat. Add the diced onion and cook for about 8 to 10 minutes until the pieces become translucent. Stir occasionally.
Now, add one pound of ground beef and one teaspoon of seasoning salt to the same skillet. Stir and cook until the meat is browned, about twelve minutes.
Drain the meat mixture onto paper towels. Wipe out the skillet and add the meat back to the pan. Stir one (15-ounce) can of refried beans into the ground beef mixture. Simmer on low heat just until the refried beans are warmed through. (You can also combine the meat and refried beans in a bowl and place the mixture in the microwave to warm the filling.)
Next, place two flour tortillas on the griddle or use a skillet to prepare one quesadilla at a time. Add spoonfuls of the beef and refried bean mixture over each tortilla and spread it out evenly. Then sprinkle a handful of cheddar cheese over the beef and bean mixture. Add another tortilla over the top. Allow the bottom tortilla to turn crisp, then carefully flip each quesadilla over to brown the other side.
Take the quesadillas off the griddle and cut them in half. Then cut each half into thirds. Serve and enjoy!
Note:
After cooking the filling, you can also assemble the quesadillas on a baking tray, then transfer them to your oven and bake for a few minutes.
