Beef and bean quesadillas Here's another simple and awesome weeknight meal that you can prepare in mere minutes. I stuffed my quesadillas with cooked ground beef, refried beans, and cheese. Then I finished crisping the tortillas on the griddle, and they turned out so delicious. Of course, you can add sour cream, green onions, black olives, avocados, etc. if you want. Plus, you can stuff your quesadillas with cooked, ground, or shredded pork, chicken, shrimp, or vegetables and rice. The possibilities are endless.
