Thanksgiving is a time for feasting, and often, that means a mountain of leftovers. While turkey sandwiches and casseroles are classic choices, don't overlook the potential of your turkey carcass. Transforming it into a rich, flavorful turkey broth is a fantastic way to utilize every bit of your bird, creating a delicious and nutritious base for soups, stews, and sauces. This guide will walk you through the simple steps to make your own budget-friendly and easy-to-prepare turkey broth.

Ingredients:

 Turkey carcass (from a roasted turkey)

  • 1 large onion, roughly chopped

  • 2 carrots, roughly chopped

  • 2 celery stalks, roughly chopped

  • 8-10 cups of water (or enough to cover the carcass and vegetables)

  • 1 teaspoon black peppercorns

  •  2 bay leaves

  • Seasoning salt to taste (add at the end)

Preparation:

  1. After enjoying your Thanksgiving turkey, remove any remaining meat from the carcass. You can use this meat for other meals. Place the turkey carcass in a large stockpot or Dutch oven.

  2. Add Vegetables: Add the chopped onion, carrots, and celery to the pot. These vegetables will add depth of flavor to your broth.

  3. Add Aromatics: Include the peppercorns and bay leaves. These will infuse the broth with a subtle, aromatic complexity.

  4. Add Water: Pour enough water into the pot to completely cover the turkey carcass and vegetables.

  5. Simmer: Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer for at least 2-3 hours, or up to 4 hours. The longer it simmers, the richer the flavor will be.

  6. Strain the Broth: After simmering, carefully strain the broth through a fine-mesh sieve or cheesecloth-lined colander into a clean pot or bowl. Discard the solids.

  7. Season: Season the broth with seasonal salt to taste. Start with a small amount and add more as needed.

  8. Cool and Store: Let the broth cool completely before storing it. You can store it in the refrigerator for up to 4 days or freeze it for several months.

Tips

Roast the Carcass (Optional):

For a deeper, more complex flavor, you can roast the turkey carcass in a preheated oven at 400°F (200°C) for about 20-30 minutes before adding it to the pot.


Add Herbs: 

Feel free to add other herbs to your broth, such as fresh parsley, thyme, or rosemary.


Skim the Foam:

During the simmering process, you may notice foam forming on the surface of the broth. Skim this off with a spoon for a clearer broth.


Use the Broth:

Use your homemade turkey broth as a base for soups, stews, gravies, or even to cook rice or quinoa.
