Old-fashioned Banana Pudding
Various banana recipes usually involve preparing a topping such as pudding, or whipped cream, to spread as the top layer on the dessert. Doing this keeps the sliced bananas from turning brown, slimy, and yucky. This is the reason why I always top my old-fashioned banana pudding with a layer of whipped cream.
In another article, I shared how I make homemade vanilla wafers. So, please go to that post to see how you can make them. Below are the ingredients and instructions to prepare my country-style vanilla pudding. After I walk you through the steps of making it, you'll find my recipe to finish preparing my homemade whipped cream and banana pudding.
Ingredients and instructions to make homemade vanilla pudding
¾ cups of Splenda, or sugar
3 tablespoons of cornstarch, or 6 tablespoons of flour
⅛ teaspoon of kosher salt
3 cups of milk
2 eggs
1 tablespoon of butter
2 teaspoons of pure vanilla extract
In a bowl, whisk the eggs.
In a two-quart saucepan, combine Splenda, or sugar, with the cornstarch, and kosher salt. Slowly add in the milk; stir. Add the eggs; combine well. Bring the mixture to a slight boil, and cook, while continuously stirring, over medium-low heat. Lower the heat and continue to stir for about two minutes. Take the pudding off the burner once it has thickened.
Next, stir in the butter and pure vanilla extract. Mix well. Cover your pudding with plastic wrap and allow it to cool before using it in the next steps.
Ingredients for banana pudding
Vanilla pudding (see above)
3 cups of whipping cream
10-12 tablespoons of sugar-free powdered sugar, or regular powdered sugar
1 teaspoon of pure vanilla extract
20-30 homemade vanilla wafer cookies
4-6 bananas, sliced
2 teaspoons of white granulated Splenda, or granulated sugar
Instructions:
To make the whipped topping:
In a mixing bowl, add the whipping cream, sugar-free powdered sugar, or regular powdered sugar, and pure vanilla extract. Beat until stiff peaks form, about three minutes.
Now, fold half of the whipped cream into your vanilla pudding. Set aside the other half of whipped cream for your topping.
To finish preparing the banana pudding:
Cover the bottom of a 9x13 glass dish with your homemade vanilla wafers.
Slice four to six bananas. Set aside.
Next, add a layer of the vanilla pudding mixture. Then add another layer of the vanilla wafers. Now, add a layer of your banana slices over the vanilla wafer layer. Continue layering the pudding, banana slices, and vanilla wafers until you reach the top of your dish, ending with a final layer of your whipped topping.
Refrigerate for at least four hours. Serve and enjoy!
