Beef, Bean, and Cheese Chimichangas
One of the most irresistible qualities of chimichangas is the satisfying crunch of their flour tortilla shells. These delicious treats are sure to become favorites in your household if they aren't already.
Ingredients:
2 pounds of lean ground beef
1 medium onion, diced
2 teaspoons of smoked paprika
1 tablespoon of chili powder
1 tablespoon of dried onion flakes
1/2 teaspoon of garlic powder
1 tablespoon of dried red pepper flakes
1/2 teaspoon of seasoning salt
1 teaspoon of freshly ground black pepper
1 (16-ounce) can of refried beans
1 package of flour tortillas (choose your preferred size)
1 (16-ounce) package of shredded Mexican cheese
Canola oil for frying
Instructions:
In a skillet, heat about 1 tablespoon of canola oil. Add the diced onion and cook until translucent, stirring frequently.
Add the ground beef, smoked paprika, chili powder, dried onion flakes, garlic powder, dried red pepper flakes, seasoning salt, and black pepper. Cook the beef mixture for about 12 minutes. Drain the excess grease off the meat. Then add the refried beans. Stir well.
Spoon the beef and bean mixture down the center of the tortillas and top with shredded cheese. Roll up the tortillas, placing them seam-side down on a tray.
Heat about 2 inches of oil to 375 degrees in a deep frying skillet.
Fry two chimichangas at a time for about 2 minutes per side. Drain on paper towels.
Top the chimichangas with your favorite toppings and serve hot.
