Country-Style Chicken Noodle Soup
As the temperatures begin to drop, it's time to break out the soup pots! Today, I am excited to share my recipe for homemade country-style chicken noodle soup that is sure to warm you up and put a smile on your face!
Ingredients:
2 boneless, skinless chicken breasts, coarsely chopped
1 pound (16-ounces) of egg noodles
4 quarts of chicken stock
4 teaspoons of chicken bouillon
1 cup of diced carrots
1 onion, finely chopped
2 cloves of garlic, minced
1/2 teaspoon of chopped chives
1/2 teaspoon of celery flakes
1 cup of evaporated milk
1/4 cup of self-rising flour, to add as a thickener (optional)
Seasoning salt and freshly ground black pepper, to taste
4 quarts of water, to cook the pasta
Instructions:
First, using a knife, coarsely chop two chicken breasts into nice, bite-sized pieces.
In a large pot, combine the chicken stock, chicken bouillon, carrots, onion, garlic, chives, and celery flakes. Bring to a boil.
Add the chopped chicken to the pot and let it simmer for about 20 to 30 minutes.
In a separate pot, bring 4 quarts of water to a rapid boil, then add the egg noodles. Cook the pasta for about 10 minutes over high heat. Drain and set aside.
Add the cooked noodles to the soup pot and stir in the evaporated milk.
If you prefer a thicker soup, mix the self-rising flour with a little water to create a slurry. Slowly pour it into the soup while stirring constantly.
Season the soup with seasoning salt and freshly ground black pepper, to taste.
Let the soup simmer for another 10 minutes before serving hot.
