Creamy chicken spaghetti
If you are looking for a different way to make spaghetti or just wanting to try something new that's affordable, this recipe may be one that both you and your family will enjoy. For this yummy spaghetti recipe, you can use leftover chicken, rotisserie chicken, chicken breasts, chicken thighs, breaded popcorn chicken, or canned chicken. Just make sure that you take the meat off the bones and discard the skin too (if you're using chicken with bones and skin).
Ingredients:
2 cups of precooked chicken, diced into bite-sized pieces. (Use more if you like your spaghetti meaty.)
1 pound of spaghetti noodles, cooked
2 (10 ½-ounce) cans of cream of chicken soup (use more if you prefer extra sauce).
1 teaspoon of onion flakes
1 teaspoon of red pepper flakes
1/2 teaspoon of garlic powder
1/2 teaspoon of freshly ground black pepper
1-1/2 teaspoons of seasoning salt (one teaspoon is for seasoning the pasta water). (The 1/2 teaspoon is for the sauce.)
1-2 carrots, shredded finely (optional)
3/4 cup of milk
1 cup of shredded cheddar cheese
Instructions:
First, cook the spaghetti noodles and the chicken. You can use leftover chicken or rotisserie chicken; just make sure that you take off the skin and take out the bones. (I baked the chicken pieces while I cooked the spaghetti noodles.)
Finely shred 1 to 2 carrots and set aside. (The carrots are optional.)
To cook the pasta, add four quarts of water inside a large pasta pan. Place the lid on the pan and bring the water to a boil over high heat. Then remove the lid. Add a teaspoon of seasoning salt. Once the water is boiling, add the noodles. Cook the spaghetti noodles (uncovered) for about 10 to 12 minutes.
Drain the water off the noodles. Then transfer it back to the pan.
Stir the soup, milk, spices, shredded carrots, and cooked chicken pieces in a bowl. Combine well.
Spoon the chicken mixture into the pan with the cooked spaghetti noodles and stir well. Turn your burner to the lowest setting and cook just long enough for the creamy chicken mixture to heat through and thicken. Stir frequently.
Now, do a quick taste test to see if your creamy chicken spaghetti needs any extra seasoning (per your taste). If it does, add extra seasoning.
Sprinkle 1 cup of your favorite cheese over the top and stir well. Allow the cheese to melt through, then serve and enjoy!
