Cake Mix Cookies

This cookie recipe is a beloved classic that stands the test of time. It is incredibly easy to prepare, requiring only three basic ingredients: one box of cake mix, one stick of butter, and two large eggs. Feel free to customize your cookies by adding optional ingredients such as chocolate chips, quick oats, chopped nuts, and candy morsels. The possibilities are endless, so go ahead and make this recipe your own!

Ingredients:

  • 1 (15.25-ounce) box of your preferred flavor of cake mix

  • 1/2 cup (8 tablespoons) of melted butter

  • 2 large eggs

Optional add-in ingredients:

  • 1/2 cup of chopped pecans, walnuts, macadamia nuts, or almonds

  • 1/2 cup of chocolate chips, or morsels

  • 1/2 cup of quick oats

  • 1/2 cup of candy morsels

  • Candy sprinkles

Instructions:

In a mixing bowl, add your preferred flavor of cake mix. Then add 1/2 cup of melted butter and 2 large eggs. Stir with a wooden spoon until all the ingredients are incorporated.


At this point, add any of the optional ingredients that you'd like. Stir well.


Lightly (very lightly) grease two cookie trays, or place a sheet of parchment paper on the inside of the trays.

Creating Cookie Shapes with Cookie Cutters:

To achieve perfectly shaped cookies using cookie cutters, start by lightly flouring your countertop. Alternatively, you can roll out the dough between parchment paper to prevent sticking without the need for additional flour.


Remember to lightly dust your cookie cutters with flour between each cut to prevent them from sticking to the dough.


Once you have cut out the cookie shapes, place them on lightly greased cookie trays.

Making Round Cookies:

For round cookies, simply pinch off walnut-sized pieces of dough and place them on a lightly greased cookie tray.


Flatten the dough balls with your fingers or create a criss-cross pattern on top using a fork.

Making Square Cookies:

After preparing the dough, lightly grease a baking pan and press the dough evenly inside. If necessary, divide the dough to fit the size of the pan. Once baked, allow the cookies to cool before cutting them into squares. Alternatively, you can roll out the dough on a lightly floured surface and use a knife to cut out perfect squares.


Bake the cookies for about 12 minutes in a 375-degree oven.


After baking, allow the cookies to cool on a rack before serving and enjoying!
