Roasted Tomato & Basil Pasta
Today, at Cooking Exceptionally With Gin Lee I'm making Roasted Tomato & Basil Pasta.

Here's the list of ingredients that are needed for my delicious recipe!
Two pounds of cherry tomatoes, left whole or halved
Extra virgin olive oil
Sea salt
Fresh basil
Four to six cloves of garlic, peeled and thinly sliced.
Two to four tablespoons of tomato paste.
One cup of fresh parsley.
Twelve ounces of your favorite pasta.
Instructions:
Arrange the tomatoes in a large cast-iron skillet, add fresh basil, and drizzle with olive oil and sea salt. Roast in the oven for 2 to 3 hours at 300-degrees. Cook until the tomatoes are slightly charred and flavorful.
In the meantime, bring a large pot of salted water to a boil. Cook the pasta until al dente, 8 to 12 minutes, depending on the shape, fresh pasta typically cooks about 3 to 5 minutes. Otherwise, follow the package instructions.
While the pasta is cooking, heat 3 tablespoons of extra virgin olive oil in a pan over medium heat. Add the sliced garlic and sauté for 3 to 4 minutes. Incorporate the tomato paste and roasted tomatoes, cooking for an additional minute. Season with salt to taste.
Transfer the cooked pasta directly from the boiling water to the pan with the tomato mixture. Add the parsley leaves and toss until the pasta is thoroughly coated in the sauce. If necessary, add some pasta cooking water to achieve the desired consistency.
Serve with an extra drizzle of extra virgin olive oil. Optionally, garnish with grated cheese and fresh basil for added flavor. Then serve and enjoy!
