2022 Chocolate Inflation Cake
No eggs or oil? No problem! You can make a moist chocolate cake without eggs and without oil. Let's beat this high inflation together because we can still have our chocolate cake and eat it too!
Ingredients:
1 1/2 cups of self-rising flour
1 cup of Splenda or sugar
1/4 cup unsweetened cocoa powder
½ teaspoon of baking powder
¾ cup of applesauce (substitute for eggs and oil)
1 teaspoon pure vanilla extract
1 cup milk or water
1-12-ounce bag of semi-sweet chocolate baking chips (I use Ghirardelli)
Ingredients used to prep the cake pan:
Cooking spray
Combine 2-3 tablespoons of Splenda or sugar with 2 teaspoons of cocoa powder
You'll dust the bottom and sides of the cake pan with the cocoa powder and Splenda mixture after greasing the pan.
What this does is add a cookie type crust to the bottom of the cake and it's delicious. Hopefully y'all can see what I mean by the photo.
Instructions:
Prep a cake pan (I used a square Pyrex dish) with cooking spray, and dust the pan with a mixture of cocoa powder and Splenda. Shake out any excess from the pan, and set it aside.
In a large mixing bowl, incorporate all the ingredients, and mix until all is combined. Next, add in the chocolate chips, stir well. Add the cake batter into the greased/dusted Splenda and cocoa prepared cake pan.
Transfer the pan to a preheated 350 degree F, or gas number 4 oven and bake for thirty-five minutes. When the cake has finished baking, set it aside to prepare the chocolate frosting.
Homemade chocolate frosting
Frosting ingredients:
2 tablespoons of softened butter
1/4 cup of unsweetened cocoa powder
1 cup of powdered sugar
1 tablespoon of almond milk
1/4 teaspoon of pure vanilla extract
Instructions:
In a mixing bowl, add the cocoa powder, powdered sugar and combine. Beat in the butter, then add the milk and vanilla extract. Mix well.
Using a spatula, transfer the chocolate frosting onto the top of the cooled cake. Serve and enjoy!
Notes:
This cake is splendid with or without frosting. It also tastes delicious without the chocolate chips added. So if you prefer, you can leave them out to make a basic chocolate cake.
