Old-fashioned Donut Muffins
If you're craving a yummy donut, this recipe is the simplest way to make the yummiest batch of old-fashioned donuts. You just make the batter, spoon it into greased muffin tins, and bake. Then, once the donut muffins are cool, prepare a donut glaze or frost the tops with your favorite icing.
Ingredients:
1/3 cup of butter, melted
1/2 cup of Splenda or regular granulated sugar
1 egg
1-1/2 cups of self-rising flour
1/4 teaspoon of ground cinnamon (optional)
1/2 cup of milk
Instructions:
In a medium-sized bowl, add 1/3 cup of melted butter, 1/2 cup of Splenda or regular granulated sugar, 1 egg, 1-1/2 cups of self-rising flour, 1/4 teaspoon of ground cinnamon (optional), and 1/2 cup of milk together. (I did use ground cinnamon in mine to add extra flavor.)
Using a fork, mix the ingredients together well.
Grease two small muffin tins or one large muffin tin. Then spoon the donut batter equally into the tins.
Transfer the muffin tins to a 350-degree oven and bake for about 20 to 25 minutes. Allow the muffins to cool if you're going to dress the tops of them with icing. Otherwise, serve the donut muffins as is, warm, and enjoy!
Simple icing
Ingredients:
1 1/2 cups of sugar-free powdered sugar
2 tablespoons of vegetable shortening
1/4 teaspoon of pure vanilla extract
About 2 tablespoons of milk
Instructions:
I made a simple icing by adding 1 1/2 cups of sugar-free powdered sugar, 2 tablespoons of vegetable shortening, 1/4 teaspoon of pure vanilla extract, and about 2 tablespoons of milk together in a bowl and mixing the ingredients well. You can play around with the amount of milk that you add until you get the consistency you like.
