Ingredients:
2 cups all-purpose flour
1/4 cup granulated Splenda or sugar
1 tablespoon of baking powder
1/2 teaspoon of seasoning salt
1/2 cup of cold, cubed butter
1/2 cup of milk
1 large egg
1 teaspoon of pure vanilla extract
1 to 2 tablespoons of milk to brush on top of the scones
Shredded cheddar cheese for topping (optional)
Instructions:
Preheat your oven to 425 degrees. Prepare a baking sheet by lining it with parchment paper or lightly greasing it.
In a large mixing bowl, combine 2 cups of all-purpose flour, ¼ cup of granulated Splenda or sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of seasoning salt. Mix them together thoroughly, ensuring all the ingredients are well incorporated.
Add 1/2 cup of cold, cubed butter to the dry mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs. This step is crucial for achieving that perfect flaky texture.
In a separate bowl, whisk together 1/2 cup of milk, 1 egg, and 1 teaspoon of pure vanilla extract until well combined.
Create a well in the center of the dry mixture, and pour in the milk mixture. Gently stir the ingredients together until a soft dough forms. Be careful not to overmix, as this can result in tough scones.
Transfer the dough onto a lightly floured surface. Knead it gently a few times until it comes together. Shape the dough into circle shapes about 1 inch thick. Place them on the prepared baking sheet, side-by-side. Then transfer the pan to the refrigerator and allow the dough to chill for 30 minutes. Doing this helps the dough relax and will create tender scones.
Bake the scones in a 425-degree oven for about 15 minutes. During the last few minutes of baking, take the scones out of the oven to brush the tops with milk, and sprinkle the tops of your scones with shredded cheddar cheese (optional). Then place them back in the oven. Your scones should turn golden brown when they're done.
Note:
If you want to make traditional triangular-shaped scones, just shape the dough into a circle about 1 inch thick and slice the dough similarly to how you'd slice a pizza. Then place the cut pieces of dough on your prepared pan and place them in the refrigerator to chill for 30 minutes. Then bake for about 15 minutes.
